Have you tried the most spring salad? No, we are not talking about Mimosa - it is spring only in design, but not in composition. And it’s not even about the first greens - spinach, lettuce and all the other “pasting” herbs are better to buy not in the early spring - there is a risk that there are more nitrates there than vitamins, and later, when there is ground greens. And clean, real, first greens for the most healthy salad can be found ... in the forest! Guessed? Of course, this is wild garlic, it is also wild garlic or bear onions.
Why such a name? But because for sleepy hungry bears, wild garlic is the best breakfast after hibernation! There are no berries yet, but vitamin greens after winter are useful even for a bear. And you try - the taste is much brighter than home-made green onions grown on the windowsill or in the garden. Although forest garlic can be grown in your garden.
And if you collect wild garlic in the forest, be careful not to mix it with the leaves of lily of the valley - the form is very similar. But to check whether wild garlic is in front of you is easy: just rub the leaf - the characteristic garlic aroma is recognized immediately.

Ingredients for ramson salad
- A bunch of wild garlic;
- 1-2 eggs;
- 2-3 tablespoons of sour cream;
- Salt to taste.
Cooking ramson salad
Since the stalks of wild garlic are cut off near the ground, it is necessary to thoroughly rinse them before cooking. First, put the leaves in a bowl of cold water for about five minutes. Do not drain the water, but catch the wild garlic - and you will see that at the bottom of the bowl particles of soil from the leaves have settled. Now thoroughly rinse the leaves in running water.
Then wild garlic needs to be cleaned. See, each stalk is “dressed” in a translucent case? This cover needs to be removed, and the leaves themselves will go to the salad. Arrows with buds can also be eaten.
Boil the hard-boiled egg, peel and cut into cubes. Greens are also finely chopped. If desired, you can add to the salad of wild garlic and other herbs: onion feathers, a couple of sprigs of dill, parsley - but not necessarily, wild garlic is tasty and healthy in itself. And its bright taste eclipses all other components.
We mix the products in a salad bowl, salt, season with sour cream.
