Light Chinese Cabbage Salad
After feasts with mayonnaise salads, I want something light, dietary ... Such as a salad of Beijing cabbage, carrots and apples!
This salad is bright and fresh, like Spring itself, a premonition of which is already in the winter air. Delicate greens, bright carrots, vitamin celery, a sweet apple - a successful and very tasty combination!
Ingredients for Light Chinese Cabbage Salad
- 100 g Peking cabbage;
- 100 g celery root;
- 100 g carrots;
- 1 apple
- 1-2 tbsp. l lemon juice;
- 1-2 tbsp. sunflower oil (or olive, as you like);
- salt, pepper - to your taste;
- a small bunch of parsley or dill.
The method of preparing a light salad of Beijing cabbage
We wash all the vegetables and fruits, remove the top leaves from the cabbage, peel the carrots and celery root, peel the apple. Dip the greens in cold water for 5 minutes, then remove and rinse under running water.
Peking cabbage is cut into large strips - this variety is much more tender than white cabbage, and it does not need to be finely chopped.
We rub the apple, celery and carrots on a coarse grater.
Finely chop the greens.
Combine the ingredients in a bowl, salt, pepper, season with oil and mix.
Easy, delicious, spring Beijing cabbage salad is ready!
You can diversify a light salad to your taste by adding seasonal vegetables and various ingredients: chicken breast or grated cheese (then it will be more nutritious, albeit not so dietary), sweet pepper, tomato or cucumber, green peas, sweet tinned corn ... Experiment, and then tell us which combination you like best!
